According to Chef Eddie, his cooking is a "Mirror of America." His cuisine, like America itself, is multi-cultural, multi-ethnic and utilizes the many flavors that are native to classic American and Mediterranean cooking. His ingenious use of ingredients pushes the envelope of flavor to turn long-time standards into new favorites.

Eddie has also found time to co-author Heartfelt Cuisine, a quick and easy, heart healthy, comfort food cookbook. He teamed up with Poore Brothers Potato Chips® to produce and market several seasonal flavors, including: Mediterranean Spiced Chips, Chef Eddie's 4 Onion Dip Chips, Chef Eddie's Chicago Style Pizza Chips, Chef Eddie's Pesto Chips and Chef Eddie's Smokehouse Cheddar Chips. Chef Eddie Matney distributes several signature sauces and dips as well as his famous Lavosh at A.J.'s Fine Foods, a high end grocer in the valley
