Grilled Tilapia With Fruit Relish and Turkey Bacon Brussels Sprouts:
Ingredients:
4 8-oz. tilapia fillets
2 Tbsp., plus 1 tsp. olive oil
Salt and pepper to taste
10 strawberries, diced
1/2 pineapple, peeled and diced
1/2 honeydew, peeled and diced
2 Tbsp. fresh mint, diced
1/2 Serrano pepper, diced
1 lime, juiced
12 Brussels sprouts, cut in half
8 oz. turkey bacon, diced
Instructions:
Coat fish with 1 Tbsp. olive oil, salt and pepper. Grill over medium heat for 2
minutes per side.
In a bowl, combine strawberries, pineapple, honeydew, mint, Serrano pepper, lime
juice and 1 Tbsp. olive oil; toss to combine.
Place Brussels sprouts in a pot of boiling water; boil 10 minutes or until soft.
Heat 1 tsp. olive oil in a frying pan. Add bacon; cook until done. Add Brussels
sprouts; toss to combine. Season with salt and pepper.
Makes 4 servings.
